Kitchen Tools for Accurate Measuring
Conversions only help if the measuring is accurate. These are the tools that remove the most guesswork, in the order we'd buy them.

A digital kitchen scale
The single biggest upgrade. A scale turns every "cup" into a number that doesn't change with how you scoop, and it lets you use the gram weights on our cups to grams page. We like the OXO Good Grips Food Scale with a pull-out display: the readout slides out so a large mixing bowl doesn't hide it.

A liquid cup needs to be read at eye level, which usually means crouching at the counter. The OXO Good Grips Angled Measuring Cup Set has a sloped inner ring so you read the line from above while you pour. It makes a real difference for broth, milk and oil.

Dry cups are filled to the brim and leveled, so they should be rigid and have markings that won't wear off. The OXO Good Grips Stainless Steel Measuring Cups nest neatly, have stamped markings, and don't stain or hold odors the way plastic can.

Spoon sets scatter across the drawer and the one you need is always missing. Spring Chef Magnetic Measuring Spoons snap together, have narrow ends that fit spice jars, and are dual-sided so one spoon does wet and dry.

Most home ovens run hot or cold by 15°F or more, which matters more than any conversion. A simple dial thermometer that hangs from the rack shows what your oven is really doing, so you can correct the dial. See the oven temperature guide for the background.

The low-tech backup for when your hands are covered in flour and your phone is across the room. It sticks to the fridge and covers the cups, tablespoons and ounces conversions you use most.
